Zucchini Cauliflower Soup

1 Tbsp oil

2 vadalia onions

1 head garlic

6 zucchini (some unpeeled)

1 bag frozen cauliflower

3 stalks of celery

1 parsnip

salt to taste

water to cover


Yield: 10-12 Servings


Instructions:

Saute onions and garlic in 1 tablespoon oil. Add in the rest of the ingredients. let it cook for 11/2 hours

Tip: There is no need to chop vegetables too small because you will be blending the whole soup..
