These colorful vegetable stacks are so elegant, incredibly easy to make and assemble and best of all they are free!!
1 "tall and thin" butternut squash peeled
1 large zucchini (peel stripes)
1 large yellow squash unpeeled or 2-3 sweet potato
3 beets (you can use prepared beets from gefen)
line a cookie sheet with parchment paper and spray with pam and sprinkle salt . Slice vegetables into round slices 1/4 " thick and place in a single layer on your prepared pans. Spray again with pam and sprinkle salt. Bake each vegetable on its own sheet at 450 for 15-30 min.
TIP: Try to choose vegetables that are similar in circumference. Stack one of each color and stick a skewer in the center to hold it in place.
