Moroccan Salmon

We all have our go to salmon favorite (I love grilled salmon on the stove) and a whole slew of other great cooked salmon recipes that we try every once in a while. My friend just sent me this recipe because she knew I would love the added vegetables and strong flavors. For me it's a one pot dinner☺


Moroccan Salmon


Vegetables:

3 tomatoes cubed

3 red peppers sliced

1 purple onion sliced

1 container kosher parsley


-Place ingredients in a 9x13 pan topped with skinless fillet salmon slices

I use 1.25 inch slices so that each slice is 5-6 oz.


Spice the salmon:

Paprika

Salt

Black pepper

Cumin

Onion/garlic powder

1/2 cup water


-Cover and bake on 350 for 1 1/2 hours
