Guilt-Free Muffins

We all have busy schedules and would love to have a low calorie snack . Here’s my favorite wholesome muffin recipe, it’s 105 calories, guilt-free and filling! It’ a perfect on-the-go snack for all those busy working gals! (and if you have a minute to sit down, enjoy it with a tea.)



Ingredients:

1½ cups whole wheat flour

1 cup oats

½ cup packed brown sugar

2 teaspoons baking powder

1½ teaspoons baking soda

1 teaspoon ground cinnamon

½ cup applesauce

1 large egg

1 cup apple juice

1 teaspoon vanilla extract

3/4 cup blueberries

Instructions:

Preheat oven to 400 degrees F.

grease 15 standard muffin cups; set aside.

Mix whole wheat flour, oats, brown sugar, baking powder, baking soda, cinnamon, applesauce, egg, apple juice and vanilla in a large bowl by hand until just combined. Stir in blueberries. Pour batter into prepared muffin cups, filling each ¾ full.

Bake 17 to 20 minutes until centers are firm and muffins are light brown.

Do not over bake.


Yield:

15 muffins
