Butternut Fries

Butternut squash is my go-to side dish probably 4 times a week. They are not the lowest calorie vegetable (apx. 40 calories for 1/2 cup cooked cubes), but they are still much lower than sweet potato. They are sweet, so filling (and not bloating).

So fill up on butternut!


Butternut Squash

Pam-spritz

1 tsp Salt

1/4 tsp Pepper

1/2 tsp Paprika

1/2 t Garlic

1/4 tsp Chili Powder

1/4 tsp Oregano



Preheat oven to 350.

Cut butternut squash lengthwise into thin sticks.

Lay on parchment paper on a cookie sheet and spray with pam.

Mix all the spices together and coat all the fries.

Bake 40-50 minutes.

Halfway through baking time shake pan.


I bake for longer so it gets crispier and burnt edges, and tastes more like French fries.
