Beets and sweet potato salad

I was sick and tired of the regular vegetable Caesar salads for lunch so here's a change for a great lunch side on a delicious crunchy bed of greens.


2 cooked beets (gefen pkg)

1 sweet potato

10 sliced cherry tomatoes

Half a bag of fresh spinach leaves

Half a bag of romaine lettuce or kale


Peel a sweet potato with a peeler. Lie it flat on a cookie sheet and spray with Pam. Sprinkle with

a little paprika and garlic powder and bake at 400 for 15 -20 minutes depending on how thick your peels are. (you want them to be slightly Brown on the edge and crunchy)

Slice the cooked beets into thin strips.

As an alternative to sweet potato you can use butternut squash to make it a free salad.

DRESSING:

1 tablespoons reduced-fat Mayo

1 tablespoons mustard

1 tablespoons vinegar

1 tablespoons honey


makes 2 servings
